Ceviche Hoy

Today our Spanish teacher, Se├▒ora Paulina, gave us a different kind of lesson. She taught us how to make one of our favorite typical Ecuadorian dishes (especially for the coast), Ceviche. I can’t explain the amazing flavors in this dish, you just need to have it. We made it with camaron (shrimp). There are different styles of ceviche, I prefer this one. It is a cold soup, with a base of lime juice and other amazing flavors like a freshly squeezed orange, tomato, cilantro, pickled onions…etc. etc. We also made fresh Aji (the salsa here is also amazing), we made patacones (fried plantain), fresh popped popcorn and a side of chifles (plantain chips). It was an almuerzo (lunch) to remember and repeat for sure. Thank you to Paulina and her son Mateo who came and taught us how to make some amazing food and gave us great company!
